Each season dictates its taste hobbies – guests want unusual, and at the same time, healthy dishes, so chefs have to keep abreast of the gastronomic pulse and the Culinary Academy of the Association of Chefs of Ukraine will help them in this not easy, but exciting business.

The Culinary Academy courses are designed for those for whom cooking and restaurant business is an integral part of life.
The course consists of
- 80% for practical work in the professional kitchen of the Academy
- 20% is an important theoretical component.
During the course, our students work out more than 20 diverse and modern techniques, some of them:
- Blanching
- Emulsification
- Gratination
- Distribution
- Abilitation
- Flaming
- Dehydration
- Spherification
- Foaming
- Sous vide cooking
13 dishes of the author’s menu, including: cold and hot appetizers, main meat and fish dishes, salads, soups, bread baskets and desserts.
Our course is 80 hours of practical work with the best specialists in the country!
After completing the training, students take an exam, as a result of which the chefs are given the appropriate categories.

After completing the course and successfully passing the final exams
STUDENTS RECEIVE THE CERTIFICATE OF THE ASSOCIATION OF CHEF AND THEY ARE ASSIGNED CATEGORIES:
- “Cook of category “A” – when passing exams for “excellent”
- “Cook of category “B” – when passing exams “good”
- “Cook of category “C” – when passing the exams “satisfactory”
- “Cook of category “D” – when passing exams “poorly”
Chefs of category “A” are guaranteed employment in the best restaurants of Ukraine

- Menu Analysis Methods
- Inventory
- Management organization
- Organization of workplaces and technological processes
- Purchase, storage of products and semi-finished products
- Development of menus and technological maps
- Food processing and cooking
- Aesthetic serving of dishes
- Culinary chemistry
- Basic compositional forms, sufficient quantity and order.
- The meaning of the elements and senses when serving
- Innovative techniques on simple products
